Cooking Diaries: Pad Thai

Confession: As much time as I spend watching drooling over the Food Network and stuffing my face with good food, the truth is that I never really cooked before moving to Hong Kong. Prior to leaving Ottawa, my mom and sister were concerned that a) I would become emaciated from not being able to cook for myself, or b) I would become massive (and poor) as a result of eating out all of the time (my family has a lot of faith in me...) Little did they know, that after nearly a quarter century of non-stop eating, the need to feed oneself is great motivation to learn how to cook, so becoming better friends with my kitchen, I did. 
Since moving to Hong Kong over two months ago, I have managed to cook some dishes that I grew up with in the O household, cooked by someone I affectionately call Mama O (my wonderful mother!). However, this pad thai dish is not something that my mother has ever made before, so it was just me and a recipe I found online that got me through the challenge. It took a slightly botched first try in order for me to perfect the dish, and the pictures that I have chosen for this post are from my second, successful attempt at making pad thai. Once I sent the pictures to my mom and sister, they immediately revoked their previous comments, and commended me on a job well done. In fact, they asked me for a step-by-step process (which I have done via Facebook) so that they might be able to try on their own. Who knew that a girl that only ever enjoyed eating food could also enjoy cooking it, too!
